LOAF
Small onion, chopped
1/2 tsp salt
500g ground turkey
2 scallions, chopped
2 tbsp hot sauce
1 tbsp tomato paste
1 tbsp soy sauce
1 tsp worcestshire sauce
1 egg
1/2 cup dry breadcrumbs
1/2 cup dried cranberries or cherries, soaked in hot water 10 mins
1/4 cup chopped fresh basil
GRAVY
Small onion, finely chopped
2 cups apple cider
1 cup chicken stock
1 bay leaf
250g dried turkish figs, coarsely chopped
1/2 tsp ground cloves
1/4 tsp ground cinnamon
LOAF
Preheat oven to 200g. Soak cranberries in hot water for 10 mins
Heat oil, cook onion low heat till soft (8 mins)
Cool onion, then mix it with all ingredients in bowl and press into lightly greased 9 x 5 x 3 inch pan
Bake 55 minutes
GRAVY
Heat oil in large saucepan - add onion, cover pan (8 mins)
Add remaining ingredients. Bring to boil, lower heat and simmer uncovered 35 - 45 mins or till figs soft and sauce reduced by half
Serve meatloaf sliced thickly with gravy (mashed potatoes/sweet potatoes & green beans)
